To make mashed cauliflower, you’ll need just a few simple ingredients: cauliflower, butter, cream or milk, garlic, salt, and pepper.

  • 1 head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 clove garlic, smashed
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon reduced-fat cream cheese
  • ½ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper

First, you’ll need to cut a head of cauliflower into florets and boil it in a large pot of salted water until tender. Once cooked, drain off the water and add the cauliflower to a food processor or blender. Then add butter, cream or milk, garlic, salt, and pepper and blend until it reaches your desired consistency.
